The Institute of Hotel Management Catering Technology and Applied Nutrition in Hyderabad was established in 1972 as the "Food Craft Institute (Hyderabad) Society" under the Andhra Pradesh Public Societies Act. In 1984, the government of India upgraded the institute to offer a 3-Year Diploma in Hotel Management and Catering Technology. Following this upgrade, the institute's name was changed to its current form. It operates under the academic jurisdiction of the National Council for Hotel Management and Catering Technology, Noida, which is set up by the Department of Tourism, Government of India.

Before the upgrade, the institute offered Craft Certificate Courses of varying durations, and the examinations were conducted by the State Board of Technical Education and Training, Government of Andhra Pradesh. After the upgrade, the National Council for Hotel Management and Catering Technology conducts examinations on an all-India basis, and certificates are awarded directly by the Council. In the academic year 2002-03, the 3-Year Diploma was transformed into a 3-Year Bachelor of Science Programme in Hospitality & Hotel Administration (B.Sc. – H&HA), and certificates are now awarded by the Jawaharlal Nehru University, New Delhi. 

The institute also participates in the 'Hunar Se Rozgar' program sponsored by the Government of India, Ministry of Tourism, offering courses in Food Production, Food and Beverage Service, House-Keeping, and Bakery to enhance employable skills among unemployed youth. The program includes a stipend and placement assistance for successful candidates seeking employment in various organizations.
